My wife and I went to Cabo for a quick Monday-to-Wednesday trip and stayed at the Waldorf Astoria Los Cabos Pedregal. We were only there for two nights, so the goal was pretty simple: relax, eat well, and not spend the whole trip figuring out kosher food.
Overall, it worked out really well. The hotel is beautiful, Cabo is easy for a short trip, and the kosher situation was much less complicated than I expected. You do need to plan ahead, though. This is not a kosher hotel where you can just show up and order anything.

    Arriving at the hotel

We landed a little before 11 Monday morning. Check-in is normally at 3, but our room was already ready, which was a great start because neither of us wanted to sit around in travel clothes for four hours.
To get to the hotel, you drive through a tunnel in the mountain. It sounds a little over the top, but it is actually very cool. You come out on the other side and suddenly the hotel and ocean are right there. It definitely feels like you are away from everything, even though the marina is close.
At check-in they told us we had been upgraded to a three-bedroom suite. There were two of us, so it was obviously way more space than we needed, but we were not going to argue. The suite had a plunge pool and you could hear the ocean from pretty much anywhere. That upgrade definitely made the trip feel more special.
Just to be clear, it was an upgrade. I would not book a regular room expecting a three-bedroom suite, but it was a very nice surprise.

    How we did breakfast

This was the part I was most unsure about before the trip. The hotel does not have a kosher kitchen, so we called ahead and asked if they could make eggs in a pan that we brought with us.
They said yes, and both mornings it worked exactly as planned. We gave them our pan and they cooked the eggs in it. No long explanation at the table and no awkward back-and-forth with the kitchen.
The hotel also gives guests a guacamole amenity. Since the prepared guac was not an option for us, they brought whole avocados and plastic cutlery so we could make it ourselves. It was a small thing, but we appreciated that they came up with a simple solution instead of just saying they could not do it.
I would definitely call before the trip if you want to do the same thing. Do not show up with a pan and assume the kitchen will be ready for it. We arranged it in advance, and that is probably why it went so smoothly.

    Kosher food nearby

For dinner we went to Ray's Cabo, the glatt meat restaurant. The food was good, and after traveling it was nice to sit down in an actual restaurant without dealing with deliveries or food we had packed.
One afternoon we walked to The Bagel Spot for lunch. It was easy and casual, and it gave us another option without needing to plan the entire day around food.

For this trip, yes. We got there early Monday, had two full days, and left Wednesday afternoon. We had enough time to enjoy the hotel, go out on the water, eat at a couple of kosher places, and relax without feeling rushed.
I do not know if I would fly all the way there for one night, but two nights worked. Three would obviously be even better if you want more time at the resort.

    Would we go back?

Yes. It was one of the easier short kosher trips we have done, mostly because the breakfast plan actually worked and we had two nearby places to eat.
The hotel is not kosher, the beach is not for swimming, and you need to make arrangements before you arrive. Those are the main things I would want someone to know before booking.
But if you are good with that, the Waldorf is a great place for a quick couple's trip. The setting is beautiful, the marina is right there, and for us it felt like a real vacation instead of two days of dealing with food logistics.
Call ahead, bring the pan, confirm the restaurants, and you should be in good shape.
